Last week, Hannah shared insights on founding Safely Gathered In and the blessings of being prepared. We asked her a few questions about gardening as well, since spring is in the air and our green thumbs are itching. She also shared with us her favorite food storage recipe – a delicious taco soup.

Spring is coming! What is your favorite thing to grow in your garden?

My favorite things to grow are definitely tomatoes!  Roma, grape, cherry… they are delicious, especially right off the vine.  They are also very versatile.

What is the biggest challenge with gardening that you’ve had to overcome?

My biggest challenge with gardening is probably my laziness.  I really don’t like weeding, and it gets so hot and humid here in GA.  Last year I was VERY pregnant when we planted our garden and it was miserable.  Thankfully, my husband took care of it for the most part last year, although some of our plants didn’t make it.

What is your favorite food storage recipe?

Well, there are so many delicious recipes on our blog, but my favorite is probably the Taco Soup.

Taco Soup
1 can black beans
1 can Great Northern beans
1 can kidney beans
1 can tomatoes
1 can corn 3/4 cup salsa
1/2 tsp onion powder
1 Tbsp taco seasoning
Chicken
Combine all ingredients into a pot and simmer for 30 minutes. (Or, combine it all into a crockpot and simmer).
